Keira is a high school junior in D20, AFJROTC cadet, big sister, skier turned snowboarder, teen entrepreneur, and the head baker at Keirbear’s Kitchen (Keirbear is a nickname an aunty gave her). She has always loved to bake, so with the extra time at home during COVID Keira and mom started making cookies. Keira’s goal is to save money for a car and college expenses. This is my entry for the Mochi Foods x Subtle Asian Baking Mochi Bake Off 2024!

I used the Mochi Pancake and Waffle Mix to make an ube and haupia pudding cake. I followed the instructions on the package but added ube flavoring, baking powder, and vanilla extract to the mix, creating fluffy and delicious layers. Haupia (coconut pudding) is between ube mochi layers with lightly toasted coconut coating the outside.
