From Local Favorite to Regional Destination: Loco Coyote Grill Continues to Grow Under New Ownership🌟
Pilar and Larry took a big step toward entrepreneurship when they purchased Loco Coyote Grill, a popular BBQ restaurant in Glen Rose, along with the 16-acre property it sits on. What began as an exciting business opportunity quickly became a vision for growth, community connection, and creating an experience that keeps customers coming back.
With a clear vision for the business, the couple focused on strengthening day-to-day management while also creating more activities and reasons for customers to stay longer, return more often, and spread the word about the restaurant. Their goal was not only to preserve the atmosphere that made Loco Coyote Grill a local favorite, but also to build on it in ways that would attract visitors from across the region.
Since taking ownership, Loco Coyote Grill has seen solid growth and continues to build a strong reputation beyond Glen Rose. The restaurant is increasingly recommended by customers from surrounding communities, showing that the improvements Pilar and Larry have implemented are resonating well beyond the local area. The combination of quality food, welcoming hospitality, and a unique destination atmosphere has helped position Loco Coyote Grill as more than just a restaurant — it has become a gathering place for families, travelers, and barbecue lovers alike.
“We saw incredible potential for growth for the loco coyote grill. We’ve worked hard to create an experience where people want to stay, enjoy themselves, and tell others about it. Seeing customers travel from surrounding communities and recommend us to friends and family has been incredibly rewarding,” said Larry.
As they plan for the future, Pilar and Larry remain committed to expanding what they offer at the Glen Rose location while also pursuing new opportunities for growth. Their next major step will be opening a second Loco Coyote Grill location in Weatherford in Fall 2026. In addition, they are exploring the potential to branch out to additional locations over time as the business continues to grow.
To support these goals, Pilar and Larry have worked with the Tarleton State University Small Business Development Center (SBDC) on strategy and business planning. Through this partnership, they have been able to evaluate opportunities, set priorities, and build a roadmap for sustainable expansion.
