Thank you all for your understanding yesterday(Saturday, July 18).

Due to a sudden medical situation that required a trip to the ER, we had to make the difficult decision to close unexpectedly. Thankfully, everything is okay, and I truly appreciate all of the kind messages and support we've received.

We sincerely apologize to anyone who stopped by or had plans to visit us.

We plan to be open today,

Sunday, July 19, from 12:00 PM – 8:00 PM.

Please note that we'll be serving pizzas only today. We won't have salads, rotisserie items, or sides available as we ease back into things after yesterday's unexpected interruption.

After a lot of thought and some new opportunities that have developed over the past couple of weeks, I've come to the difficult decision that I will soon be transitioning into a new professional role and will no longer be able to operate Rip's Brick Oven Pizzeria.

Because of that, I want to offer Rip's as a turnkey opportunity before making the decision to close the doors. The restaurant is fully equipped and operational, with established recipes, systems, equipment, and a loyal customer base. Whether someone is looking to continue Rip's as it exists today or build their own concept, there is an opportunity here.

Over the next two weeks, I'll be exploring whether there is serious interest from someone who would like to take over the operation. If the right person comes along, I'd be happy to help make the transition as smooth as possible. If not, we'll begin winding things down.

I know some of you may be surprised by this, especially since I recently shared plans to scale back and continue operating. At the time, that truly was the plan. As often happens in life and business, new opportunities and new information have changed the path forward, and I believe this is the right decision for both my family and my future.

To everyone who has supported Rip's over the past years thank you. Your encouragement, friendships, and loyalty have meant more than you know.

If you've ever thought about owning a restaurant, or know someone who might be interested in a fully equipped, turnkey operation in Carbondale, please send me a private message. I'd love to have a conversation.

In the meantime, we're still here, still making pizza, and we'd love to see you over the next couple of weeks.

As we move through this transition, our hours of operation will be determined on a week-to-week basis due to changing commitments, available inventory, and staffing. We'll post updates in advance each week so everyone knows when we'll be open.

Our menu will also be temporarily simplified and will likely consist primarily of our brick oven pizzas while we operate with a smaller crew and limited inventory. I appreciate your patience and understanding during this time.

My hope is that someone sees the same potential in Rip's that I did and chooses to carry the tradition forward. Until then, we'll continue making great pizza, enjoying the time we have together, and keeping everyone updated along the way.

When I opened Rip's Pizzeria with my best friend, Rip, in late 2023, I had big dreams and no idea just how challenging owning a small business could be.

Over the past few years we've learned a lot, and one thing has become clear: our current model simply isn't sustainable.

Instead of closing our doors, we're choosing to adapt.

Beginning in July, Rip's will be open Friday and Saturday evenings. This new schedule gives us a healthier balance while allowing us to keep doing what we love, making great pizza for our community.

You'll also notice a simpler menu. Our specialty pizzas aren't going away; they'll rotate as weekly specials instead of being available all the time. This helps us keep ingredients fresh, reduce waste, and continue serving the quality you've come to expect.

We love Rip's, and we know many of you do too. Our goal is simple: keep making great pizza for years to come, just in a way that's sustainable for my family and our small team.

Thank you for supporting us, believing in us, and sharing so many meals with us the past few years. We can't wait to see you on Friday and Saturday nights.
